Place sweet potato in a large bowl of water.
Cook in the microwave for 10 minutes or until soft.
Spray a little nonstick spray in a medium-size saute pan and heat on medium heat.
Add shredded turkey to the pan along with peppers.
Season with Mrs. Dash Garlic and Herb Seasoning.
Once meat is warmed through, simmer on low for about 5 minutes.
Cut sweet potato in half and top with turkey and pepper mixture.
