Italian Breakfast

  • ¼ c pizza sauce
  • 1 egg
  • ¼ c low-fat shredded mozzarella cheese
  • 1 slice Ezekiel sprouted bread toasted


  • Preheat skillet to medium-high.
  • Spray with nonstick spray, and add an egg to the skillet.
  • Cook until egg whites are set and then remove from heat.
  • Add pizza sauce and cheese to toast.
  • Microwave for 20 seconds or until cheese is melted.
  • Top with the cooked egg.


Garnish with fresh parsley and basil.
