Egg Muffins

  • 1 lb sliced deli meat turkey or ham
  • 12 eggs
  • ¼ c shredded cheddar cheese
  • Salt and pepper to taste


  • Preheat oven to 350 degrees
  • Spray muffin tin with cooking spray or grease with oil then line with deli meat to create a “muffin cup”
  • Crack an egg directly into each “muffin cup”
  • Add a dash of salt and pepper and a pinch of shredded cheddar cheese
  • Bake for 20 minutes.


Two egg cups equal one serving.
